The meat was excellent as I told you on the phone. I put the meat in a wine-cognac marinade for 24H. Then I cooked it in the oven for approximately 2 H. Meanwhile, I used the marinade to make a sauce, cooking it slowly on the stove. Once the meat cooked, we set it aside and singed the juices with cognac and mixed this with the sauce. I served it with homemade cranberry relish, cooked apples stuffed with cranberries and potato puffs : it was delicious! With it we drunk a "Chateauneuf du Pape" : truly a taste of heaven! Just wanted to let you know that the venison arrived this morning. Have a roast thawing for dinner this evening. I have never seen meat so lean, and am really looking forward to enjoying our meat. By the way, the smoked sausage sticks are wonderful! Very flavorful, and yet still tasted pretty lean. I will have to order some next shipment.
